    Chip inclusion

    Chips ride inside an already-chocolate dough, so the contrast is texture rather than flavor.

  2. B

    Cocoa-loaded crumb

    Dutched cocoa replaces part of the flour, which is why CK-03 runs one gram lower in fiber than CK-02.

  3. C

    Fiber lattice

    The fiber blend still sets the structure, working against cocoa's tendency to dry a crumb out.

  4. D

    Matte surface

    Alkalized cocoa browns differently — the finished cookie reads matte rather than glossy.

    Proprietary Fiber Blend (Cassava Root Fiber, Inulin, Oat Fiber)

    Three fibers doing three jobs: cassava root fiber builds structure, inulin feeds gut bacteria, oat fiber holds moisture so the crumb never turns chalky.

  2. 02

    Sunflower Flour

    Ground sunflower seeds stand in for wheat. They carry fat and protein, which is why the cookie tastes rich instead of gritty — and they grow on far less water than almonds.

  3. 03

    Butter

    Real butter, full stop. It is the reason the edge snaps and the center gives. No seed oils were used to fake it.

  4. 04

    Chocolate Chips (Sugar, Chocolate Liquor, Cocoa Butter, Soy Lecithin, Vanilla)

    Real chips, not compound coating. Cocoa butter melts at body temperature, which is why the chip goes soft in your hand and not waxy.

  5. 05

    Cocoa Powder (Processed with Alkali)

    Dutched cocoa deepens color and cuts acidity. It is what takes CK-03 from chocolate to double chocolate.

  6. 06

    Agave Syrup

    A small amount of liquid sweetener for browning and chew. It does the caramelization work sugar usually gets credit for.

  7. 07

    Eggs

    Structure and lift. Eggs bind the fiber blend to the flour so the cookie holds its shape at this size.

  8. 08

    Natural Vanilla Flavor

    Rounds the edges of the fiber blend and lets the cinnamon or cocoa read cleanly.

  9. 09

    Salt

    Sharpens sweetness so less sugar tastes like more.

  10. 10

    Baking Soda

    Controls spread and browning. It is why a mini cookie bakes evenly all the way through.

    Stevia Leaf Extract

    Used in trace amounts to lift sweetness without adding sugar. Enough to balance, not enough to leave an aftertaste.

    Vitamin E (Tocopherols)

    A natural antioxidant that keeps the butter and sunflower fats from going stale.
