Proprietary Fiber Blend (Cassava Root Fiber, Inulin, Oat Fiber)
Three fibers doing three jobs: cassava root fiber builds structure, inulin feeds gut bacteria, oat fiber holds moisture so the crumb never turns chalky.

Sunflower Flour
Ground sunflower seeds stand in for wheat. They carry fat and protein, which is why the cookie tastes rich instead of gritty — and they grow on far less water than almonds.

Butter
Real butter, full stop. It is the reason the edge snaps and the center gives. No seed oils were used to fake it.

Agave Syrup
A small amount of liquid sweetener for browning and chew. It does the caramelization work sugar usually gets credit for.

Structure and lift. Eggs bind the fiber blend to the flour so the cookie holds its shape at this size.

Rounds the edges of the fiber blend and lets the cinnamon or cocoa read cleanly.
