    Cinnamon veining

    Cinnamon is folded, not dusted, so the spice runs through the crumb rather than sitting on the surface.

    Crumb matrix

    Sunflower flour and butter form a short, sandy matrix — the structural reason a mini cookie can be this small and still snap.

  3. C

    Fiber lattice

    Cassava root fiber and inulin create a network that holds shape as the cookie cools, replacing what gluten normally does.

    Edge caramelization

    Agave browns at a lower temperature than sugar, giving the rim its color in a shorter bake.

    Proprietary Fiber Blend (Cassava Root Fiber, Inulin, Oat Fiber)

    Three fibers doing three jobs: cassava root fiber builds structure, inulin feeds gut bacteria, oat fiber holds moisture so the crumb never turns chalky.

  2. 02

    Sunflower Flour

    Ground sunflower seeds stand in for wheat. They carry fat and protein, which is why the cookie tastes rich instead of gritty — and they grow on far less water than almonds.

  3. 03

    Butter

    Real butter, full stop. It is the reason the edge snaps and the center gives. No seed oils were used to fake it.

  4. 04

    Agave Syrup

    A small amount of liquid sweetener for browning and chew. It does the caramelization work sugar usually gets credit for.

  5. 05

    Eggs

    Structure and lift. Eggs bind the fiber blend to the flour so the cookie holds its shape at this size.

  6. 06

    Natural Vanilla Flavor

    Rounds the edges of the fiber blend and lets the cinnamon or cocoa read cleanly.

  7. 07

    Cinnamon

    Saigon-forward warmth. It is the churro, and it is doing most of the flavor work in CK-01.

    Salt

    Sharpens sweetness so less sugar tastes like more.

    Baking Soda

    Controls spread and browning. It is why a mini cookie bakes evenly all the way through.

    Stevia Leaf Extract

    Used in trace amounts to lift sweetness without adding sugar. Enough to balance, not enough to leave an aftertaste.

    A natural antioxidant that keeps the butter and sunflower fats from going stale.
